Watergate Salad

Welcome to Daisy Farm Kitchen! I was looking through my Grandma Anna Vee’s recipe book and saw Watergate Salad.

I found the name interesting and did some research. Apparently the recipe was originally called Pistachio Delight.

I came across one theory suggesting that the salad name changed to Watergate because the Watergate scandal happened around that time. 

I love how this recipe has very few ingredients and whips up quick. I think the Watergate Salad makes a good side dish or dessert for a gathering.

Also, it is green, which means it is a perfect fit for St. Patricks Day which is less than 2 weeks away!

Watergate Salad

Watergate Salad

Total Time 1 hour 10 minutes

Ingredients

  • 1 box instant pistachio pudding (3.4oz)
  • 1 large cool whip (8oz)
  • 1 cup miniature marshmallows 
  • 1 can crushed pineapple, drained (20oz)

Instructions

Mix pudding and cool whip together. Add pineapple and marshmallows. Refrigerate for 1 hour before serving.
