Rolo Cookies
A unique way to enjoy the classic chocolate caramel candy.
Ingredients
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 1 cup butter, softened
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 bag of Rolos (10.6 oz)
- 1 cup white chocolate chips
Instructions
Beat together white sugar, brown sugar, and butter until light & fluffy. Add vanilla and eggs, beat well. Then add flour, cocoa powder, and baking soda. With lightly floured hands, shape about 1 tablespoon dough around 1 Rolo. Bake at 375 for 7-9 minutes. Let cool for 2 minutes then transfer cookies to a wire rack. After cookies are completely cooled, melt the white chocolate chips and then drizzle it over the cookies.

Notes
These Rolo cookies were a fun and easy recipe to make! It is very important to not overbake these cookies, or else they become too crunchy. For the white chocolate, pour 1 cup of chips into a ziplock bag. Then, place into the microwave for 15 second intervals, taking out the bag and stirring between each interval, until it has melted. After that, cut a small opening at one of the corners and squeeze the chocolate carefully over the cookie. After drizzling, let the cookie sit for 5 minutes to let the white chocolate harden.
