Oatmeal Cake with Lazy Daisy Frosting

Welcome to Daisy Farm Kitchen! Today I made my Grandma Anna Vee’s Oatmeal Cake with Lazy Daisy Frosting. 

It is one of my absolute favorite cakes. I love how rich and moist it is.

The frosting is the best part because you get the sweetness of the brown sugar, coconut, and pecans. The recipe calls for walnuts, but I used pecans instead. 

After the cake is done, I immediately put the frosting on. Then broiled it in the oven for 30 seconds to 1 minute, just until it is golden brown. 

This is a remake, I made it back 2 1/2 years ago and forgot how good it tastes. 😍🤤

Oatmeal Cake with Lazy Daisy Frosting

Oatmeal Cake with Lazy Daisy Frosting

Ingredients

  • 1 1/2 cup flour
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/2 sp salt
  • 1 cup quick oats
  • 1 tsp vanilla
  • 1 1/4 cup warm water
  • 1/4 cup butter, soft
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 cup brown sugar
  • 1/4 cup heavy whipping cream
  • 4 tbsp butter
  • 1 cup shredded coconut
  • 1 cup chopped walnuts

Instructions

Cake Instructions

Beat butter, brown sugar, white sugar, cinnamon, eggs, and vanilla. Stir in oats and warm water, then mix in flour, baking soda and salt. Pour into a greased 9-inch square pan. Bake for 30-35 minutes at 350 degrees. Spread with lazy daisy frosting and broil until bubbly.

Frosting Instructions

Combine ingredients in a saucepan and bring to a boil. Pour over cake. Broil cake with frosting for 30 seconds or until bubbly.

1/4 cup heavy whipping cream

4 tbsp butter
